上用大香枨十个。蒸饼十个。先将蒸饼焙干。为细末。将枨子去穣。烂研如泥。入蒸饼

酒曲方
用曲一百斤，绿豆二升，桂花六两（以上均需准备），以及川芎、砂仁、丁香、益智、白术、人参、荜茇、吴茱萸。绿豆具有祛风功效。将药材蒸熟后，经过七日发酵。
曲十斤，豆二石五升，麦芽末三斗，苍耳末、蓼末各五斗，占米一石（磨成粉）。
生药当归、陈皮、红豆、藿香、白茯苓二斤半、南星、白豆蔻、防风、附子五斤、木香、官桂、胡椒、人参、白术、杏仁各一斤。以上药物研成细末。取白面一千斤，用药末与面粉混合均匀。在六月三伏天，选择寅日寅时，用水和面和豆，与药末一起搅拌均匀。踩踏制成薄曲块，用楮叶按照前述方法包裹。每米一石，用曲二十五斤。煎煮成熟汤三斗，先投入米二石，三天后再投入米一石，仍然煎煮浆液，放凉。夏季发酵八天，冬季发酵十二天。滤去渣滓，收取清酒。或者装入半坛并封口，用于制作腊酒，遵循前面的方法。
广木香、细辛、砂仁、甘草、南星、肉豆蔻、桂花、桂皮、桂枝、胡椒、川椒、杏仁、白术。

Jiuqu Formula (Wine Qu Formula)
Use 100 jin of Qu (fermented starter), 2 sheng of Mung Bean (Vigna radiata), and 6 liang of Osmanthus Flower (Osmanthus fragrans); all must be prepared. Also include Ligusticum Chuanxiong Rhizome (Chuanxiong, 川芎), Amomum Villosum Fruit (Sharen, 砂仁), Eugenia Caryophyllata Flower Bud (Dingxiang, 丁香), Alpinia Oxyphylla Fruit (Yizhi, 益智), Atractylodes Macrocephala Rhizome (Baizhu, 白术), Ginseng Radix et Rhizoma (Renshen, 人参), Long Pepper Fruit (Bibo, 荜茇), and Cornus Officinalis Fruit (Zhuyu, 茱萸). Mung beans have the effect of dispelling wind. Steam the medicinal materials until cooked, then ferment for seven days.
Qu 10 jin, Beans 2 dan 5 sheng, Malting Barley Powder (Maiya Mo, 麦芽末) 3 dou, Xanthium Sibiricum Fruit Powder (Canger Mo, 苍耳末), Polygonum Persicaria Herb Powder (Liao Mo, 蓼末) each 5 dou, Zhan Rice 1 dan (ground into powder).
Raw herbs: Angelica Sinensis Root (Guibai, 归 - likely referring to Danggui/Angelica), Tangerine Peel (Chenpi, 陈皮), Red Bean (Hongdou, 红豆), Agastache Rugosa Herb (Huoxiang, 藿香), Poria Cocos (Baifuling, 白茯苓) 2.5 jin, Arisaema Cum Bile (Nanxing, 南星), Cardamomum Rotundum Seed (Baidoukou, 白豆蔻), Saposhnikovia Divaricata Root (Fangfeng, 防风), Aconitum Carmichaelii Lateralis Radix Praeparata (Fuzi, 附子) 5 jin, Aucklandiae Radix (Muxiang, 木香), Cinnamon Twig (Guigui, 官桂), Black Pepper Fruit (Hujiao, 胡椒), Ginseng Radix et Rhizoma (Renshen, 人参), Atractylodes Macrocephala Rhizome (Baizhu, 白术), Apricot Kernel (Xingren, 杏仁) each 1 jin. Grind the above medicines into fine powder. Take 1,000 jin of white flour, mix evenly with the medicine powder. In the third decade of June (Sanfu period), select a Yin day at Yin hour. Use water to mix the flour and beans, blend uniformly with the medicine powder. Tread and form thin qu blocks. Wrap them according to the method using Cathaya argyrophylla leaves. For every 1 dan of rice, use 25 jin of Qu. Boil to make mature soup (3 dou). First add 2 dan of rice, then after three days add another 1 dan of rice, still boiling the mash. Let cool. Ferment for eight days in summer, twelve days in winter. Filter out the dregs, collect the clear wine. Or fill half a jar and seal it to make Winter Wine (La Jiu), following the previous method.
