Li Shizhen stated: In ancient times, people cultivated Niubang by planting it in fertile soil. The tender shoots were washed and eaten as vegetables; the roots were boiled, dried, and made into jerky, which was said to be very beneficial to the human body. Nowadays, few people eat it. It sprouts in March, with stems reaching three or four chi in height. It blooms in clusters in April, with pale purple flowers. The fruits resemble maple keys but are smaller, with numerous fine thorns clustered on the calyx; each fruit contains dozens of seeds.
