*Yue Zhi* (Records of Yue) states: Shrimp are produced in saltwater; the larger ones are five to six cun long and die upon leaving the water. Fishermen use silk-adhesive nets, which are four chi five cun or six cun deep, standing vertically in the sea. The silk is soft and light; when shrimp approach, their antennae and tails become entangled, making escape impossible. Two shrimp dried together are called "dui xia" (paired shrimp); fresh ones have fat, white, and sweet meat. Zhu Paishan's *Ganyuan Xiaoshi* (Brief Records from Citrus Garden) notes: Sea shrimp have broken antennae and severed noses, segmented backs, hard scales on the tail, many legs, and are good at leaping. They are larger than those born in streams and rivers, over a chi long, and their antennae can be used as hairpins. Locals dry two shrimp together, calling them "dui xia," to serve as premium delicacies. *Huanyou Biji* (Notes from Official Travels) records: Huaihai produces "dui xia," several cun long. Dried in pairs, they curve and link like rings; cooked into soup, they are delicious. Residents often offer them to guests, and they can be transported far away. Some say: paired by male and female, but distinguishable only when carrying eggs; after spawning, males and females cannot be distinguished. Their appearance begins after the 15th day of the first lunar month, peaks in the second, third, and fourth months, and disappears after the Dragon Boat Festival, which is also an unexplainable natural law.
[Paired shrimp] tonifies the kidney and promotes yang; soak in *shaojiu* (Baijiu/Chinese liquor) and take orally.
Treats hemiplegia due to phlegm-fire and pain in bones and sinews. *Yixue Zhinan* (Medical Guide) records: He Tao Ren (Walnut Kernel), Mian Hua Zi Ren (Cotton Seed Kernel), Du Zhong (Eucommia Bark, stir-fried), Ba Ji Tian (Morinda Root), Zhu Sha (Cinnabar), Gu Sui Bu (Drynaria Rhizome), Gou Qi Zi (Goji Berry), Xu Duan (Teasel Root), Niu Xi (Achyranthes Root) each 2 liang; Tu Si Zi (Dodder Seed), Da Xia Mi (Large Dried Shrimp) 4 liang, Si Bing (Silk Cake) 4 liang. Boil in 20 jin of *shaojiu* (Baijiu) and take orally. For elderly patients, add Fu Zi (Prepared Aconite Root) and Rou Gui (Cinnamon Bark) each 1 liang. After finishing the wine, dry the dregs, grind into fine powder, make pills with honey. Take 2 qian per dose, delivered with wine.
In Cantonese: Shrimp paste made in Xiangshan County is considered the best, called "Xiangshan Shrimp Paste." It originates from the waters off Dajin Island in Xinning, and that from Xiachuan is also fragrant and fine. The heads, tails, and antennae are red, the body white, and the eyes black. In the initial salting stage, 3 jin of salt is used per 100 jin of shrimp, fixed at the mouth of the vat. Wait until the shrimp decompose, then increase the salt to 40 jin. The taste becomes excellent and it can be stored for a long time.
Resolves tree gu poison. Guangdong has toxic tree gu; this tree bears no flowers, fruits like milk, and ingestion causes immediate death. Shrimp paste can resolve this poison.
*Huanyou Biji* (Notes from Official Travels) records: Daling River in Liaodong produces shrimp paste and shrimp oil, both sweet and delicious. Pinghai produces another small shrimp named Hong Mao Zi (Red-haired Child), which makes particularly good shrimp paste. Currently, Ningbo in Zhejiang and Suzhou also produce shrimp paste, which tastes good.
