Take three dou of Xingren (Semen Armeniacae Amarum), remove double kernels and skins/tips, wash, and pound two dou in a mortar until crushed. Grind like Congee for Cold Food Festival, extracting eight sheng of juice. Decoct to four sheng. Taste test: it should be fragrant and smooth, indicating it is cooked. If not reached, it is uncooked; only cooked is ideal. Let it cool completely. Then add one dou six sheng of good Qu (fermented starter). Decoct to extract eight sheng. This is the first filtration. Steam rice again, take three sheng of Xingren, grind to extract one dou two sheng of juice, decoct to six sheng. This is the second filtration. Steam rice again, proceed with the third filtration based on the proportion of the second. If rice is insufficient, separately take two sheng of Xingren, grind to extract eight sheng of juice, decoct to four sheng. Adjust rice cooking and filtration accordingly. If still insufficient, grind two more sheng of Xingren, extract eight sheng of juice, decoct to four sheng, and filter. Stop when cooked. Three dou of Xingren per one shi of rice. Grinding in stages prevents the juice from turning sour. In winter, all can be decocted at once: calculate three dou of Xingren to yield one shi six dou of juice, decoct to eight dou four sheng, and soak the Qu. Divide into portions for brewing. Seal for four periods of seven days (28 days). Open, clarify, and take the clear liquid. Press the lees; the lees can be dried and powdered, mixed with wine and taken.
