Select large green plums that are round, tender, and crisp. First cut off the shell lid. Carefully remove the pit. Then grind fine Baifan (Alumen) powder and press it inside. Replace the lid and secure it well with bamboo needles. Leave it overnight. Early the next morning, calcine it over charcoal fire. The plum charcoal will disappear if fully burned; retain the plum flesh. The alum after calcination becomes light like talc powder, tastes extremely sour. Store it for future use.
